Why Coconut Sugar is better than normal sugar?

Coconut sugar is a popular sweetener in many vegan diets, as it is plant-based and minimally processed. Coconut sugar also contains the soluble fibre inulin, which is linked to a lower risk of blood sugar spikes. Regular table sugar has an average rating of 58, while coconut sugar’s GI (Glycemic Index) is reported as low as 35 and as high as 54.  Whilst it is less likely to cause blood sugar spikes due to its higher fructose and fibre content, among those who have concerns with blood sugar regulation, we recommend its use sparingly as with any alternative sweetener.
