Sago Pudding We made this Sago Pudding following a recipe shared by @peckishme and substituted jaggery with our Organic Coconut Sugar. It turned out delicious.

1 cup Sago
3 cups Organic Coconut Cream
3 cups Water
1 cup Organic Coconut Sugar
1 tsp Cinnamon, powdered
1/2 tsp Clove, powdered
Pinch of salt
Handful of nuts chopped
Handful of Raising

Bring the water to a rolling boil and add the sago. Boil for about 5 minutes while stirring constantly, making sure no clots form. Add the salt.
Lower the flame and cover with lid and simmer until the sago pearls turn translucent.
Mix in the coconut milk, the sugar and the spices. Keep stirring and boil for about 3 minutes.
Take off heat and add the cashews and the raisins. You can serve this either hot or chilled.

We enjoyed it chilled!
